Menu Planning

With Ms. Firecracker’s optional schedule, I find myself at her gym multiple nights every week.  It is now imperative to have a menu plan in place with a variety of dinners that are either crock pot or very easy to make.  If I don’t, Mr. Muscles and the kids will just have sandwiches or eggs every night.  Sigh.  I want healthier and more variety for my family.

We can compound our already full schedule with planning for our upcoming fall camping trio, preparing for Ms. Lovebug’s 9th birthday, making Young Man’s (12) blanket (this kind of blanket), preparing soap and soap orders, and everyday life in a large family.  Something as simple as knowing what is for dinner makes a huge difference!

This week’s dinner menu:

  • Baked chicken breast, couscous (new dish for us), and steamed veggies
  • Omelets (fillings will include choice of onions, *bellpeppers, *tomatoes, *hot peppers, mushrooms, cheese, leftover chicken breast)
  • Pizza meatloaf, *salad, homemade bread, stuffed eggs
  • Cornbread, great northern beans (made in the crock pot), a variety of veggies from the garden.
  • Chicken breast hoagies.  I will be making the hoagies!

I am not sure what we are doing this weekend, so the menu is for the weekdays only.

I think I will surprise the kiddos with a blackberry cobbler made with blackberries we harvested and froze the summer.  I rock the whole mom-thing like that.  *wink*

Menu Planning Monday

     Menu planning is essential in a large family.  There is no last minute guessing about what to prepare for dinner.  The natives get restless way too quickly!  

     This week’s menu is a short one.  We will only be eating at home for 3 dinners.  Easy peasy! 

On the menu:


     Spaghetti with parmesan/ garlic bread.  Daddy has most of the kids this night so I like to make something quick and easy.  Keeps them from having to “cook” anything.  Another plus:  I don’t have to clean up the littles with the spaghetti in their hair and up their noses.  LOL


     Beef BBQ Stew- easy to make in the crock pot and have ready at just the right time.  Part of our family eats early, and part of our family eats late.  Crock pot has everything ready to eat when we need it.


     Chicken Fajitas with refried beans.  I am home Wed. nights so I am able to prepare dinners that take a little more time.


      Before you go, I need a little bit of help from you all.  Two nights a week the kids and I are not at home.  Eating out is way too expensive.  I have tried cooking and taking meals like spaghetti, mini pizzas and such, but they are too messy, take a lot of space to bring food, requires heating and lots of clean up of the littles.  I need some ideas of meals to take with.  A bunch of snacks just doesn’t cut it.  We eat enough sandwiches for lunch.  What can I take for the kids and I that is quick, easy, and healthy?  It can require cooking or not.  I am just looking for suggestions of food that is portable and easy to clean up after.   Suggestions, please!!

Menu Planning Monday

     This week will be a little different from my average week.  No gymnastics practice.  No basketball practice.   There is nothing to yank me out of the house in the evenings this week.  🙂 

     I will only have to cook for 4 of the nights so my menu was very easy.  LOL   I am even assigning meals to specific nights. 

Monday:  Hamburgers, roasted corn on the cob and good ole southern cole slaw.

Tuesday:  Spaghetti and garlic/ parmesian bread.

Wednesday:  Chicken fajitas with refried beans.  (A family favorite)

Thursday:  Beef stew and homemade biscuits.

Breakfasts will include this fabulous baked oatmeal, cold cereal, fresh fruit or pancakes. 

Lunches yogurt and granola, turkey and cheese pitas, fresh fruit with crackers and humus or grilled cheese sandwiches.

     I also bought some organic, scrumptious Irish cream pudding mix.  I can’t wait to make that. 

     Oh, and the ingredients for organic root beer floats.  Man, they take me bake to my summers as a kid.  One of my favorite treats my dad would make us.  Yum!

     I decided to do my grocery shopping on Saturday instead of waiting until Monday.  Hubs is no longer allowed to go.  He makes it take twice as long, and he kept disappearing on me.  I spent way too much time trying to find him.  LOL  The next two weeks are ready to go as far as groceries and our menu goes.  Menu planning makes it all so much easier!

Menu Planning Monday

Mmmmm.  Food.  Check out my last post and you can see how much I enjoy food.  LOL

This week’s menu is set, but I am going to be doing a good bit of MPM blog hopping looking for new recipes.  Easy and healthy.  That is what I am looking for.  🙂  Aren’t we all?! 

I do not plan my meals for a particular day.  Rather, I make a menu, my shopping makes sure we have everything for that meal, and I (or hubs) chooses that day what we feel like fixing. 

This week’s choices are:

Lemon pepper chicken with a salad, fresh cantalope and (hopefully) homemade bread.

Beef tips with onions, bell peppers and rice.

Pita Pizzas- a favorite of the kids  🙂

Chicken fajitas with refried beans.

Tuna Salad- simple, but delicious!

Spaghetti with meatballs and garlic bread.

Friday night will be dinner out, and that means no cooking!

Menu Planning Monday

     It’s just another manic Monday. Whoa-o-oh!   LOL

     Ok, it is not manic at all.  This weekend was, but today is rather slow paced.  Yay!  I need that.

     I am loving the “picnic dinner” ideas ya’ll have given me.  They have been a huge help.  I am need of a few more.  For anyone who doesn’t know what I am talking about:  I have to take dinner with me (for myself and the kids) to the gym 2 nights a week while my gymnasts work out.   I need ideas for finger foods or easy foods to take with and eat on bleachers.  Your ideas are so greatly appreciated!!

     This week’s gym days menu”

Monday (gym day)  Hummus, crackers, different fruits and vegetables

Wednesday (gym day)  Cold chicken, potato salad, vegetables

     The rest of the week:

Meatloaf  (made with ground turkey) w/ mashed potatoes, corn and a salad

Beef Stew

Pasta Bake

BBQ Chicken w/ cole slaw, baked beans and sliced vegetables

Saturday we have a birthday party so we will be eating there. 

     I am always happy to share recipes.  Just let me know if there anything you want a recipe to.

     For the blogger who wanted to know my ground turkey meatloaf recipe:

(I am cutting this in half so it will feed 4-6 people)

1 pound of ground turkey

1 egg

3/4 cup of bread crumbs, oatmeal or crushed crackers

1 cup of tomato sauce

1 good squirt of ketchup  🙂

1/4 cup of minced onion

     I mix all of the above ingredients together, add a few dashes of Worcestershire Sauce, some garlic (fresh or powder), salt, pepper to taste.  Form it into a meatloaf (bread) pan.  Some people like to add a little ketchup to the top of their meatloaf as well.  Sometimes I will write a message with the ketchup.  It tickles the kids pink when I do.  LOL   Bake at 375° for about 45 minutes or until done.

Menu Planning Monday

     I want to thank everyone for their awesome suggestions for my “picnic dinners”.    If anyone still has suggestions I am all ears!

For this week our dinners will be:

Hot dogs (Hebrew Nationals), baked beans and salad

Roast with potatoes, carrots and onions

Pita Pizzas

Spaghetti with meatballs and garlic bread

Breakfast with cheesy, scrambled eggs, pancakes and turkey sausage

Baked herb chicken with green beans, mashed potatoes and salad. 

Mr. Muscles will be taking us out to eat one night this weekend.  Yay!! 

Breakfasts will be a rotating event of biscuits, cereal, oatmeal, grits or fresh fruit.

Lunches are sandwiches, yogurt with granola and fruit, crackers with humus or leftovers (if we have them 🙂 )

Menu Planning Monday

     Happy Monday everyone! 

     I am in need of your help.  2 nights a week the children and I do not get home until somewhere between 8:30 and 9:00 pm.  While I have been cooking crock pot meals for those evenings, it is still a very late time to eat.  By the time we get finished fixing that last pieces of dinner, eat and clean up, it is very late.  The little are grumpy by then and we are all beyond ready for bed. 

       It is such a long time (7-8 hours+) between lunch and dinner that I have to pack plenty of snacks for myself and the kids.   That got me to thinking that there has to be a better way.   Instead of just taking snackes I would like to try preparing and taking a “picnic dinner” with us to the gym.  This is where you come in.  What are some ideas that you have that would make great “picnic dinners”?  They have to be transportable, not just plain sandwiches, and the meals really need not take too long to prepare.   You can see from my menu below that we make everything homemade so microwave dinners are a no-no.  We try to have a very healthy diet.  🙂  Anyway, I sure would appreciate some ideas and suggestions from you.  Thank you!

     My menu this week:

Spaghetti and meatballs with garlic bread

Roast beef stew

Meatloaf, mashed potatoes, peas and fresh veggies.  I use ground turkey meat instead of ground beef.  

Breakfast including:  scrambled eggs from our chickens, sweet potato pancakes and turkey sausage.

Hamburgers, coleslaw, pinapple and stuffed eggs

Chicken fajitas with refried beans

Grilled herb chicken with corn, asparagus and fresh veggies.

For the blogger who asked for my BBQ Chicken Stew (I am cutting everything in half for you so this will serve 4-6 people):

     1 pound of diced chicken marinated in your favorite BBQ sauce

     2 cups of diced potatoes

     1 cup of corn

     1 cup of green beans

     1 cup of diced tomatoes

     1/2 a diced onion

     Add a dash or two of salt, pepper, garlic and a smidge of celery salt. 

     Put all of this in a pot or crock pot and cook together with half a bottle of your favorite BBQ sauce.   You can add any veggie you want.   Some like leeks, carrots, cabbage or celery.

Menu Monday~ Jan 26th

Welcome to my menu!  We make everything pretty much from scratch so if you have any questions, or would like a recipe,  just ask.  I will answer! 

I don’t assign a particular day to a meal, but rather I make a menu and choose the meal in the morning.  It all depends on my schedule.  Today is a kid’s gymnastics day so it will be a crock pot meal.

Roast in the crock pot with mixed vegetables and a salad.

Homemade pizza (one of the children’s favorites)

BBQ Chicken in the crock pot with sliced fresh veggies, green beans and coleslaw.

Venison and rice with roasted potatoes and corn.  This is a meal that Mr. Muscles will make.  Love those!

Hamburgers with baked beans and potato salad.

Spaghetti with meatballs and garlic bread.

Saturday night will be a family night out, and that means no cooking or cleaning.  It also means a tea glass that never gets empty.  LOL

Menu Monday

     It has been a few weeks since I have posted my menu.  Things have been really crazy, but I am working to get things streamlined again.  LOL- I have high hopes! 

     Our menu for this week is: 

♣ BBQ Chicken with roasted herb potatoes, green beans and fresh sliced veggies.

♣ Homemade veggie pizzas – I am doing them on some harvest grain bread.  Mmmm!

♣ Turkey meatloaf, sweet potato casserole and salad

♣ Nachos!  The kids love these

♣ Hamburgers (turkey burgers), corn, cole slaw.

♣ Spaghetti and I would like to try making meatballs this week instead of a meatsauce.  I have to find a good recipe for them. 

♣ One night a week Mr. Muscles takes us out to dinner.  No cooking, no cleaning and someone keeps my glass of tea filled!  Woo hoo!!

Menu Monday

It is going to be a very busy week but between hubby and I we will get these meals on the table!

Lamb roast w/ new potatoes and fresh vegetables.  I am looking for a recipe for the roast.


Chicken fajitas with refried beans.  My kids love this and even though it is from scratch it only takes about 25 minutes to get all of the ingredients prepared.


Hamburgers with potato salad and roasted corn on the cob.  I am using a new recipe for the burgers and it is very yummy.  Turkey meat, minced onion, a little garlic powder, salt, pepper and worchsteshire sauce.  Mix well, make patties and cook.  Oh So Good!


Breakfast including:  cheesy scrambled eggs, turkey sausage, gravy and toast.


Beef tips with onions, peppers and rice- hubby loves this one!


Chicken Alfredo.  Chicken breast over noodles and covered with homemade alfredo sauce. 


BBQ Chicken stew.  This is a great crock pot meal for the nights we get home from gymnastics late.  The house smells so good when we get home.  🙂
