
It is going to be a very busy week but between hubby and I we will get these meals on the table!
Lamb roast w/ new potatoes and fresh vegetables. I am looking for a recipe for the roast.

Chicken fajitas with refried beans. My kids love this and even though it is from scratch it only takes about 25 minutes to get all of the ingredients prepared.
~
Hamburgers with potato salad and roasted corn on the cob. I am using a new recipe for the burgers and it is very yummy. Turkey meat, minced onion, a little garlic powder, salt, pepper and worchsteshire sauce. Mix well, make patties and cook. Oh So Good!

Breakfast including: cheesy scrambled eggs, turkey sausage, gravy and toast.
~
Beef tips with onions, peppers and rice- hubby loves this one!
~
Chicken Alfredo. Chicken breast over noodles and covered with homemade alfredo sauce.
~
BBQ Chicken stew. This is a great crock pot meal for the nights we get home from gymnastics late. The house smells so good when we get home.
~

Great recipe for the lamb roast: pierce the roast in several places across the top and insert cloves of garlic into the meat. Then mix together about 1 -2 TBSP. of rosemary (crushed in your hand first) with some salt, pepper, and maybe a little thyme or sage if you like. Rub it all over the top of the roast and roast it long and slow in the oven surrounded with cubed potatoes, onions and carrots. Serve with mint jelly on the side. Baste the veggies well with the juices of the meat while you roast.
My mom taught me this and it never fails to delight us all. Soooo yummy!

We’re doing a little of the same! Turkey meatloaf tonight, burgers tomorrow, smoked turkey loin Wednesday, homemade turkey taco burritos with black beans Thursday, smoked chicken Friday, baked potato bar Saturday–with lots of homemade bread, cheese biscuits, chicken nuggets and breakfast burritos for mornings and lunch.
